Bonensalade

Salad:
- 425 g can red kidney beans, drained and rinsed
- 425 g can cannellini beans, drained and rinsed
- 425 g can chickpeas, drained and rinsed
- 3 cups chopped peppers (red, green & orange/yellow)
- 1/2 cup chopped red onion
Dressing:
- 3 Tablespoons olive oil
- 2 Tablespoons red wine vinegar
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/8 teaspoon salt
- pepper to taste
Place beans, peppers, and onion into a large glass bowl.
Mix together the dressing ingredients and add to beans.
