Bonensalade

Salad:

  • 425 g can red kidney beans, drained and rinsed
  • 425 g can cannellini beans, drained and rinsed
  • 425 g can chickpeas, drained and rinsed
  • 3 cups chopped peppers (red, green & orange/yellow)
  • 1/2 cup chopped red onion

Dressing:

  • 3 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • pepper to taste

Place beans, peppers, and onion into a large glass bowl.

Mix together the dressing ingredients and add to beans.
