Vegan New York Cheesecake

Ingredients

For the crust:

1 ½ cups graham cracker crumbs (or vegan digestive biscuits)

½ cup coconut oil (melted)

2 tablespoons maple syrup

A pinch of salt

For the filling:

2 cups raw cashews (soaked in water for at least 4 hours, then drained)

1 cup coconut cream (or full-fat coconut milk)

½ cup maple syrup

¼ cup lemon juice

1 tablespoon vanilla extract

1 tablespoon cornstarch (optional, for firmness)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C).

Make the crust:

In a bowl, mix the graham cracker crumbs, melted coconut oil, maple syrup, and salt until well combined.

Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for about 10 minutes, then let it cool.

Prepare the filling:

In a blender or food processor, combine the soaked cashews, coconut cream, maple syrup, lemon juice, vanilla extract, and cornstarch (if using). Blend until smooth and creamy, scraping down the sides as needed.

Assemble and bake:

Pour the filling over the cooled crust and smooth the top.

Bake for 45-50 minutes or until the edges are set but the center is slightly jiggly. It will firm up as it cools.
